Poached shrimps


 
6 servings

Simmer for about 5 minutes
  • -8 cups water
  • -¼ cup sliced onion
  • -1 clove garlic
  • -1 bay leaf
  • -2 celery ribs with leaves
  • -1 tablespoon salt
  1. Wash, drain and add :
  • -2 lbs green shrimps
  1. Slice and add :
  • -½ lemon
  1. Simmer the shrimps for about 5 minutes or till pink ; drain immediately and chill. 
  2. Serve very cold in their shells, to be shelled at the table, with a bowl of Remoulade sauce
Or shelled them, remove the intestinal vein and used them as desired.
